120g baby spinach 8 slices bacon, cooked and crumbled 3 hard boiled eggs, sliced ½ cucumber, halved and thinly sliced 2 spring onions, green parts only, sliced 300g cooked chicken, chopped 150g cherry tomatoes, halved 40g crumbled feta cheese 30g walnuts, roughly chopped Honey mustard dressing (or dressing of choice)
Method
Arrange the spinach on a large platter or divide among 4 plates. Layer all the toppings over the spinach — scatter for a rustic look or arrange in rows for a composed salad. Serve with honey mustard dressing. Tip: the easiest way to get cooked chicken is using a rotisserie chicken, or cook extra earlier in the week and save for this salad.
