Ingredients

  • 120g baby spinach
  • 8 slices bacon, cooked and crumbled
  • 3 hard boiled eggs, sliced
  • ½ cucumber, halved and thinly sliced
  • 2 spring onions, green parts only, sliced
  • 300g cooked chicken, chopped
  • 150g cherry tomatoes, halved
  • 40g crumbled feta cheese
  • 30g walnuts, roughly chopped
  • Honey mustard dressing (or dressing of choice)

Method

Arrange the spinach on a large platter or divide among 4 plates. Layer all the toppings over the spinach — scatter for a rustic look or arrange in rows for a composed salad. Serve with honey mustard dressing. Tip: the easiest way to get cooked chicken is using a rotisserie chicken, or cook extra earlier in the week and save for this salad.
