Ingredients
- 120g baby spinach
- 8 slices bacon, cooked and crumbled
- 3 hard boiled eggs, sliced
- ½ cucumber, halved and thinly sliced
- 2 spring onions, green parts only, sliced
- 300g cooked chicken, chopped
- 150g cherry tomatoes, halved
- 40g crumbled feta cheese
- 30g walnuts, roughly chopped
- Honey mustard dressing (or dressing of choice)
Method
Arrange the spinach on a large platter or divide among 4 plates. Layer all the toppings over the spinach — scatter for a rustic look or arrange in rows for a composed salad.
Serve with honey mustard dressing.
Tip: the easiest way to get cooked chicken is using a rotisserie chicken, or cook extra earlier in the week and save for this salad.
