Large handful of rocket ΒΌ cucumber, diced Handful of cherry tomatoes, halved Handful of Kalamata olives, chopped 1 tbsp chopped dill 50g crumbled feta cheese 100g shredded chicken (or protein of choice) 1 heaped tbsp thick yoghurt 1 heaped tsp wholegrain mustard 1 tsp balsamic vinegar (or lemon juice) 1 tsp honey Salt and pepper
Method
Chuck everything into one bowl including the dressing ingredients. Season with salt and pepper and mix. Done.
