Ingredients

  • Large handful of rocket
  • ΒΌ cucumber, diced
  • Handful of cherry tomatoes, halved
  • Handful of Kalamata olives, chopped
  • 1 tbsp chopped dill
  • 50g crumbled feta cheese
  • 100g shredded chicken (or protein of choice)
  • 1 heaped tbsp thick yoghurt
  • 1 heaped tsp wholegrain mustard
  • 1 tsp balsamic vinegar (or lemon juice)
  • 1 tsp honey
  • Salt and pepper

Method

Chuck everything into one bowl including the dressing ingredients. Season with salt and pepper and mix. Done.
