Ingredients
- Large handful of rocket
- ΒΌ cucumber, diced
- Handful of cherry tomatoes, halved
- Handful of Kalamata olives, chopped
- 1 tbsp chopped dill
- 50g crumbled feta cheese
- 100g shredded chicken (or protein of choice)
- 1 heaped tbsp thick yoghurt
- 1 heaped tsp wholegrain mustard
- 1 tsp balsamic vinegar (or lemon juice)
- 1 tsp honey
- Salt and pepper
Method
Chuck everything into one bowl including the dressing ingredients. Season with salt and pepper and mix. Done.
