Ingredients
- 2½ tsp ground cumin
- 1½ tsp smoked paprika
- 1 tsp chili powder (or to taste)
- 1 tsp dried oregano
- ½ tsp cracked black pepper
- 500g chicken, fish or ground beef
- 1 tbsp olive oil
- 1 cup lettuce leaves, sliced
- 2 medium tomatoes, diced
- 1 small jalapeno (or to taste)
- 12 corn taco shells
- 1 avocado, mashed
- 1 cup shredded tasty cheese
- 1 cup chopped fresh coriander
- 1 dollop sour cream per person (lactose free if required)
Method
Mix together the taco seasoning ingredients (cumin, paprika, chili powder, oregano, black pepper) in a jar.
Heat oil in a fry pan and add the taco seasoning, stir for 30 seconds or until fragrant. Add meat of choice and cook through.
Assemble tacos with all preferred fillings, keeping avocado to 1 tbsp and top with coriander and sour cream.
