Ingredients

  • 2½ tsp ground cumin
  • 1½ tsp smoked paprika
  • 1 tsp chili powder (or to taste)
  • 1 tsp dried oregano
  • ½ tsp cracked black pepper
  • 500g chicken, fish or ground beef
  • 1 tbsp olive oil
  • 1 cup lettuce leaves, sliced
  • 2 medium tomatoes, diced
  • 1 small jalapeno (or to taste)
  • 12 corn taco shells
  • 1 avocado, mashed
  • 1 cup shredded tasty cheese
  • 1 cup chopped fresh coriander
  • 1 dollop sour cream per person (lactose free if required)

Method

Mix together the taco seasoning ingredients (cumin, paprika, chili powder, oregano, black pepper) in a jar. Heat oil in a fry pan and add the taco seasoning, stir for 30 seconds or until fragrant. Add meat of choice and cook through. Assemble tacos with all preferred fillings, keeping avocado to 1 tbsp and top with coriander and sour cream.
