Ingredients
- 420g plain 2% Greek yogurt
- 4 eggs
- 315g plain flour
- 30g ground flaxseed
- 1 tbsp garlic-infused olive oil
- ½ tsp red pepper flakes
- 1 tbsp baking powder
- 1 tsp salt
- 150g spinach, chopped
- 50g chives, finely diced
- 180g cheddar cheese, shredded (divided)
- 250g cooked ham, diced
Method
Preheat the oven to 200C and line a baking tray with parchment paper.
In a medium mixing bowl, whisk together the Greek yogurt and eggs. In a separate bowl, combine flour, ground flaxseed, garlic-infused oil, red pepper flakes, baking powder and salt.
Slowly add the dry ingredients into the wet ingredients, mixing well.
Add the spinach, chives, cooked ham and two-thirds of the cheese. Mix until fully combined (you may need to use your hands).
Lightly flour your hands and divide the dough into 12 even-sized round discs about 2.5cm thick. Arrange on the baking tray with space between each. Sprinkle the tops with the remaining cheese.
Bake at 200C for 5 minutes, then decrease to 180C and bake for an additional 20 minutes without opening the oven. Done when the bottoms are golden brown and the tops are just beginning to brown.
