Ingredients
- 150g pack of cooked prawns
- 1 tbsp garlic-infused olive oil
- 1 tsp coriander paste/puree
- ½ tsp chilli paste/puree
- 1 pack sushi nori seaweed sheets
- 1 small avocado
- 1 mug jasmine rice
- Toasted black sesame seeds
- Fresh chives
Method
30 minutes before lunch, place one mug of jasmine rice with two mugs of boiling water into a glass container with a lid. Microwave on a low power setting (180W on a 1000W microwave) for 28 minutes. Do not remove the lid until the end.
Mix all the prawn ingredients (prawns, garlic oil, coriander paste, chilli paste) in a bowl and set aside.
When rice has cooled a little, lay a seaweed sheet on a chopping board. Trim to a rectangular shape if needed.
Create a diagonal line of rice starting from one corner to just before the middle of the opposite side. Lay a piece of avocado next to the rice and add prawns on top.
Roll into a cone shape — overlap the small part of the seaweed over the filling, then keep rolling clockwise (pointy end stays in the centre) until nice and tight.
Top with sesame seeds and freshly chopped chives.
